Spread coconut on a cookie sheet lined with parchment. Bake coconut for 8 minutes and let cool.
Cream together the butter and sugar.
Add in the eggs, one at a time, mixing thoroughly after each addition.
Mix in vanilla and juice.
Combine baking powder, salt and flour and mix in a cup at a time.
Stir in the pineapple.
Place coconut in a shallow dish.
Portion dough out and roll into balls, the press into the coconut, making sure to coat both sides.
Lay onto a sheet pan lined with parchment paper and bake for 15 minutes, or until browned around the edges . Let cool on the pan for a few minutes before transferring to a wire rack to cool completely.
