- 2 c Sweetened Shredded Coconut
- 2 c Butter
- 1/2 c Brown Sugar
- 1/2 c White Sugar
- 2 t Vanilla
- 2 Eggs
- 1/4 c Pineapple Juice Concentrate
- 2 t Baking Powder
- 1/2 t Salt
- 4 c Flour
- 2 c Dried Pineapple Chunks
Instructions:
- Preheat oven to 350.
- Spread coconut on a cookie sheet lined with parchment. Bake coconut for 8 minutes and let cool.
- Cream together the butter and sugar.
- Add in the eggs, one at a time, mixing thoroughly after each addition.
- Mix in vanilla and juice.
- Combine baking powder, salt and flour and mix in a cup at a time.
- Stir in the pineapple.
- Place coconut in a shallow dish.
- Portion dough out and roll into balls, the press into the coconut, making sure to coat both sides.
- Lay onto a sheet pan lined with parchment paper and bake for 15 minutes, or until browned around the edges . Let cool on the pan for a few minutes before transferring to a wire rack to cool completely.
