Ingredients:
- 1 package Extra Firm Tofu
- 2 T olive oi
- 1 T garlic, minced
- 1 t ginger, minced
- 1 t crushed red pepper flakes
- 1/4 c brown sugar
- 3 T soy sauce
- 1 1/2 t rice wine vinegar
For Rice Bowl Assembly
- Cooked rice
- Matchstick carrots
- Cucumber, sliced thin
- Red onion, sliced thin
- Toasted cashews or peanuts
- Cilantro
Instructions:
- Preheat oven to 350.
- Drain tofu and cut tofu into one inch by one inch sticks. Place on a sheet pan lined with parchment paper and bake for 25 minutes. Let cool.
- Cut tofu sticks into bite sized pieces.
- Heat oil in a sauté pan over medium heat add garlic, ginger and tofu. Sauté tofu till browned.
- Add brown sugar, stirring constantly until the sugar starts to caramelize. Add soy sauce and vinegar. Cook until sauce thickens.
- Portion rice into four bowls. Top with tofu, carrots, cucumber, onion, cashews and cilantro.
